Moltó Negre, Cava Brut, Casa Rojo

Unusual Cava, this, and definitely not – we repeat NOT – to be confused with the stuff called Cava in supermarkets.

For a start, it’s made from black grapes (the French would call it a Blanc de Noirs). And it’s very, very sophisticated.

In the glass, this pleasantly sparkling cava has a pale pink hue. On the palate, it releases notes of citrus, red berries, garden fruits, and pastries.

The sparkling wine “Moltó Negre” comes from the province of Tarragona (DO Cava) and is made from red grapes of the indigenous Trepat variety. After the manual harvest, a two-hour maceration follows, including the skins, after which the free-run juice is collected and fermented. The base wine then undergoes a second fermentation in the bottle, which lasts twelve months.

Laura Muñoz-Rojo and Jose Luis Gomez simply wanted to be happy. That’s why they decided to seek out the best wines from the most diverse corners of Spain and bottle them under their own label. In 2009, when the “Casa Rojo” project began, the two partners had neither their own wine cellar nor their own vineyards. But that didn’t stop them: they launched their “The Wine Gurus” line, for which they collaborate with renowned oenologists and winemaker friends from all over Spain.

Whilst, with financial support from their family and a credit institution, they were able to build their own winery on 23 hectares on the Murcia plateau in 2015, Laura and Jose Luis continue to collaborate and produce distinct and unusual wines such as this through their network of “Wine Gurus”.
