If you’ve been put off by ‘natural wines’ in the past, this is one to make you think again. (And let’s face it, some natural wines take ‘funky’ too far, veering too close to tasting like the taste equivalent of the smell of a jumble sale! This is NOT one of those.)
Natural wines are wines made with minimum intervention in the vineyard and the use of no additives in the winemaking process. Particularly of interest is the avoidance of sulphites at any point in the winemaking process. Sulphites serve two main purposes: to stop fermentation at the point desired; and to keep the wine clean and free of oxidisation.
The Cave de Tain is a co-operative of winemakers from around the village of Tain l’Hermitage, growing vines to strict sustainable principles. In the winery, their winemaking process as scrupulously hygienic in temperature-controlled stainless steel tanks, meaning they don’t need sulphites to clean their wine. The careful control of the yeast used allows the fermentation to die back naturally. So the wine produced avoids all of those funky, slightly oxidised, yeasty flavours often found in more rustic natural wines.
The further benefit of this is that the wine that goes into the bottle is still ‘live’ and the tiniest amount of residual fermentation keeps its flavour lively, bright and fresh.
