Cremant de Die
Entirely gathered by hand, the Crémant de Die Brut is made using the Traditional Method. After an initial fermentation in tanks, the wine is bottled and the addition of a tirage liqueur made of sugars and selected yeasts triggers off a second fermentation. The maturing process takes one to three years on slats. Adding an expedition liqueur, after the removal of sediments by freezing bottlenecks and disgorging, ends up the process.
Beautiful pale yellow colour with green reflections, on the nose there are mild notes of fresh almonds and white flowers which are enhanced by a hint of citrus fruit.
