Prosecco Collfondo, Fratelli Collavo
Prosecco made the old fashioned way: second fermentation in the bottle and that’s it. No filtration or adding sugar, it’s left on its lees at the bottom of the bottle ‘col fondo’ to produce a slightly cloudy, richly textured, somewhat rustic bottle of fizz. About a squillion kilometres from the stuff made in stainless steel vats. This one’s biodynamic too!

Gentle fizz. Fresh and bruised apple, and a hint of white peach. Pleasantly dry with a sort of bready creaminess giving it a lovely mouthfeel. Simple in the most charming way possible. Just how we like our Italians. (Eh, Luca?)
To finish the workaday feel, this prosaic prosecco is closed with a crown cap.
