Extremely limited edition single cask, cask strength, single malt whisky from the Bunnahabhain distillery on Islay
A heavily peated whisky, matured for 12 years in a Pedro Ximénez sherry hogshead, this release takes on the idiom To Go Pear Shaped, a playful nod to Bunnahabhain’s famously pear-shaped stills.
The nose is dominated by rich, damp peat balanced with dark chocolate, banana bread, smoked bacon and maple syrup. The palate follows with burnt toast, cloves, star anise and deep sherry sweetness, finishing long, smoky and bold. A powerful Islay whisky where peat and PX meet perfectly.
When the Port of Leith Distillery opened in 2023 and started production of their first malt whisky the following year, they’d already been working on this project for 7 years. Their first whisky is maturing in casks now but will still not be released for several years to come. Making a new malt whisky is a slow process!
In the interim, they are working on a variety of side projects to provide income as they wait. They’ve developed the delicious Lind & Lime gin and the easy going grain whisky simply called ‘Table Whisky’. They’re selling the port and sherry that filled the casks in which their malt whisky now resides. And they’re working with other distilleries on a couple of projects such as the ‘Perpetuity’ blend, and their latest venture: ‘Whisky while we wait’…
With a nod to the bonded warehouses that once made Leith the heart of Scotland’s drinks trade, the Leith Bond is the warehouse and blending room of Port of Leith Distillery. In the autumn of 2025 the first two whiskies in the Leith Bond Single Cask Series were released: first in a planned collection of single cask whiskies that especially reflect the true character of ditilleries that they love.
Each release will be from a single, specially selected cask and will, therefore, be extremely limited availability. Each will be a collectors’ piece.
