The 2015 Beaune 1er Cru les Perrieres contains two-thirds whole cluster fruit and is matured in 25% new oak. That whole cluster lends this an attractive earthy, woodland scent to the aromatics, a hint of dried orange peel developing with time. The palate is medium-bodied with crisp tannin, fresh acidity, quite structured with an assertive, rather austere finish. I would like a little more flesh once in bottle.
Domaine de Montille is one of Burgundy’s greatest estates. The wines are made for ageing but in recent years, since Hubert’s son Etienne has taken over, the Domaine has moved towards expressing greater aromatic potential in the wines. The Domaine has moved progressively towards organic and now biodynamic methods working in closer harmony with nature. The wines still benefit from ageing and develop an abundance of complexity as they mature.
