By fermenting and maturing in stainless steel vats and letting the wine mature unfiltered on its lees (the residue of dead yeast from the fermentation period) this wine combines ‘leesy’ creaminess with crisp, refreshing acidity to create a wine of great character and complexity that belies its (relatively – it’s come all the way from California) great price point.
