One of our absolute favourite’s, the winemaking is extremely simple; hand harvested grapes, are fermented in open barrels, with simple punch down of the cap, wetting, pressing, filling and stirring all done by hand. 18 months in 500 litre French Demi- Muids.?The nose is complex with spice and clove notes, the palate is fleshy and mouth-filling with attractive dark fruits, plum and cassis. Overall it has a minerality and fine supple structure that makes it a very interesting and compelling drink.
