A manzanilla is a fino sherry made in the seaside town of Sanlúcar de Barrameda where ageing by the sea brings a salty tang. Manzanilla comes from the Spanish word for apple and you’ll probably identify some crisp, green apple flavours in their too, with a satisfying dry, nuttiness to boot.
Try it cold with a bowl of green olives.
