Lemoss Frizzante ‘Col Fondo’, Ca’ di Rajo
Prosecco, but maybe not as you know it, this is Prosecco made the way your Italian Grandfather would have made it back in the day (had you had one – an Italian Granfather, that is).

Sparkling wine at its simplest… essentially: add yeast to grape juice, start fermentation, bottle it straight away. Called Pet Nat in other parts of the world, CO2 released in fermentation is reabsorbed by the wine to create bubbles when opened. The wine is unfiltered, depositing a residue at the bottom (‘col condo’) and creating a slightly cloudy wine when poured.
Its ‘Frizzante’ style is lighter than more common ‘Spumante’ as well as lower in alcohol, making it ideal for summer evening drinks in the garden, or great with a picnic at Glyndebourne (or Hellfest, we don’t judge).
This rustic sparkling wine is made in the old fashioned col fondo (on the yeast) style with zero dosage, unfiltered and frizzante. The result is a lighter fizz than other sparkling wines. Lots of citrus peel, green apple combine with refreshing acidity and a beautiful dry finish.
This independent family-owned winery in Piave, Treviso has been going since 1931 and because they own all their vineyards and never buy in grapes, they can maintain high standards every step of the way. Very much into traditions and quality, they use a lot of native varieties and a very old Veneto trellising style, the Bellusera system, that gives their vines a quite unique diamond-shaped pattern.
